Fried Cabbage with Apples and Bacon

Are you still looking for a quick side dish to bring to dinner tomorrow or something for Sunday supper?  I love fried cabbage and serve it often, as it goes with almost anything from chicken and dumplings to baked ham to roasted turkey; and it is one of my “pantry” dishes – something which I almost always have the needed ingredients, in the house.

Ingredients:

2-4 pieces of Bacon – though it can be made without the bacon,

1 large head of Cabbage – washed and chopped into bite size pieces

1 large Onion, chopped coarsely

2 teaspoons of Garlic

1-2 Apples, cleaned and cored

2 teaspoons of Caraway Seeds

¾ Cup of Apple Cider or Apple Juice – Water can be substituted

Salt and Pepper to taste

 

Directions:

Fry bacon, until crisp, remove from skillet and set aside; add onions to bacon fat, and sauté until translucent, add cabbage and caraway seeds, and fry for about five minutes, add apples and deglaze pan with apple cider, salt and pepper to taste.  I prefer the apples and cabbage to be a bit crisp, but make it to your taste.  After you plate the cabbage and apples, sprinkle the bacon on top.

You can of course omit the bacon, and simply sauté onions, cabbage and apples in a bit of oil and juice or water, if you would like a healthier version.
