Artichoke, Spinach, and Bacon Sauté Over Pasta

This is a very full flavored dish which can be served hot or at room temperature, a great addition to any brunch or pot luck.

Ingredients:

3-5 slices of Bacon

1 medium Onion, finely diced

2 teaspoons of Garlic

2-4 tablespoons of Olive Oil

1 pound of Spinach

½ pound of frozen Artichoke Hearts

2 teaspoons of Thyme

Salt and Pepper to taste

Parmesan Cheese

 

1 pound of Pasta, your choice

 

Directions:

Chop bacon into bite size pieces, and fry till crispy. Remove bacon from heat, and set aside, add onions to bacon drippings, sauté till translucent, add garlic and olive oil, stir and cook over medium heat for approximately two minutes, add spinach. Let the spinach cook until it is soft and has absorbed the onion and garlic flavor, add the artichokes, salt, pepper, and thyme, continue cooking until artichokes are tender. Cook pasta al dente, drain and toss with olive oil and parmesan cheese. Place pasta on the bottom of your dish, add spinach and artichokes, a bit more cheese, and top with reserved bacon.
