Aunt Helen’s Jam Cake

Year’s ago, my Aunt gave me the above clipping, sharing with me that she had once won a recipe contest, with her Mother’s Jam cake.  I had lost the recipe, but my cousin kindly shared it with me, and I now with you!

 

“Here is the recipe mom used for the Jam Cake: Jam Cake”

 

Ingredients:

1 cup soft butter

½ tsp salt

2 cups sugar

½ tsp cloves

5 eggs

½ tsp allspice

1 heaping cup of blackberry jam

1 cup chopped nuts (English walnuts)

3 cups sifted flour

1 cup raisins (I don’t use raisins)

1 tsp baking soda

1 & 1/3 cup buttermilk

 

Directions:

Cream butter and sugar until light, add eggs, one at a time, beating well after each addition. Add jam and beat well. Add sifted flour, soda, cloves, salt, all spice alternately with buttermilk, beginning and ending with dry ingredients. Stir in nuts and raisins.

Bake in 9×13 ½-inch pan. Serves 12 people. Mom did not have a temperature or time listed. At a minimum we are saying 35 minutes at 325 degrees but it may need closer to 50 minutes or a little higher temps. Frost with icing.

 

Icing for Jam Cake

Ingredients:

1 cup butter

1 cup sugar

1 cup milk

3 T flour

1 T vanilla

 

Directions: 

Cream butter and sugar until fluffy. Cook milk and flour until thick. Cool mixture. Add vanilla to sugar and butter, then add mixture and beat.
